Roasted Kale with Shaved Cucumber and Roma Tomatoes on Crackers
Ingredients:
- Kale leaves
- PAM non-stick spray
- Oregano
- Himalayan salt
- Garlic powder
- Fresh cilantro
- Avocado oil
- 1 cucumber
- 2 Roma tomatoes
- Black pepper
- Artisan crackers
Instructions:
1. Prepare the Kale:
- Wash, dry, and tear kale into bite-sized pieces.
- Spray a medium-hot pan with PAM.
- Add kale and sprinkle with oregano, Himalayan salt, and garlic powder.
- Drizzle with avocado oil and sauté for 5-7 minutes until tender and crispy.
2. Prepare the Cucumber and Tomatoes:
- Shave the cucumber into thin slices.
- Slice Roma tomatoes into half-moons.
3. Assemble and Garnish:
- Place roasted kale, shaved cucumber, and tomato slices on top of the artisan crackers
- Sprinkle with Himalayan salt, black pepper, and chopped fresh cilantro.
