Roasted Kale with Shaved Cucumber and Roma Tomatoes on Crackers

Ingredients:

  • Kale leaves
  • PAM non-stick spray
  • Oregano
  • Himalayan salt
  • Garlic powder
  • Fresh cilantro
  • Avocado oil
  • 1 cucumber
  • 2 Roma tomatoes
  • Black pepper
  • Artisan crackers

Instructions:
1. Prepare the Kale:

  • Wash, dry, and tear kale into bite-sized pieces.
  • Spray a medium-hot pan with PAM. 
  • Add kale and sprinkle with oregano, Himalayan salt, and garlic powder.
  • Drizzle with avocado oil and sauté for 5-7 minutes until tender and crispy.

2. Prepare the Cucumber and Tomatoes:

  • Shave the cucumber into thin slices.
  • Slice Roma tomatoes into half-moons.

3. Assemble and Garnish:

  • Place roasted kale, shaved cucumber, and tomato slices on top of the artisan crackers
  • Sprinkle with Himalayan salt, black pepper, and chopped fresh cilantro.
